Gluten itself isn’t necessarily BAD for a person. It is naturally found in nature and in whole grains. It is the AMOUNT of gluten that a typical individual consumes that makes it unhealthy. Plus, our wheat has been genetically tampered with in such a way that the grain of today is not the grain of 50-60 years ago. It has a far higher gluten content and is now a highly processed product. It is these 2 factors that have caused gluten intolerance and its health issues to rise so dramatically in recent years.
That said, gluten IS bad for someone with celiac disease (like myself) as the body with celiac disease cannot digest gluten and it causes intestinal damage that create malabsorption issues.
Gluten is like the ‘glue’ that holds baked goods and breads together, giving them their “stretchy” texture. Picture a piece of freshly baked wheat bread and pull it apart. The consistency that allows you to pull it apart (and not break into crumbs) is a protein structure called gluten that is found in wheat, barley, and rye.
It is this protein structure that holds the baked good together. This is why cooking gluten-free can be tricky, especially when baking. But don’t worry!
